They say, themselves: At Madras Banyan Tree, you will get a taste of delicacies from the four Southern Indian states: Tamil Nadu, Kerala, Andhra Pradesh and Karnataka. Each state has a treasure trove of distinctive flavours to offer. This is because the same ingredients and spices create a different magic depending upon the way in which they are used and the different cooking techniques. Outside the sub-continent, “Indian” food is synonymous to the cuisine from the Northern region of the country, mostly dedicated to Mughalai cuisine. Unfortunately the South Indian culinary schools do not find a place in these menus. We at Madras Banyan Tree try to incorporate the Southern culinary schools of Chettinadu, Tanjavur, Hyderabad, Udipi, Mapla, Nair, and Kerala Syrian to name a few.
